I have a dinner meeting tonight and I was asked to bring a dessert. I decided to do something quick and easy that everyone likes – brownies. I had a box of Trader Joe’s Truffle Brownie Mix in the pantry. Sounds good. Easy. Quick. Too easy. I usually like to put a little more effort into my baking. I made a few adjustments. First of all, Ida Garten, my idol, has taught me that if you add a little teaspoon of coffee to any chocolate recipe, you’ll enhance the flavor. So I did that. Then I softened an 8 oz. bar of Philly Cream Cheese (the neufchatel variety – it’s lighter), and blended it with one egg and 1/3 cup sugar, and a splash of vanilla. I spread about 2/3 of the brownies enhanced with the coffee into a baking dish and spread the creamcheese mixture on top. I dropped blobs of the remaining brownies on top, and then I marbled the whole thing. (I love making swirls with the knife). Baked at 350 for about 45 minutes. They look and smell delicious. I think I’m going to name them
